Mary Spencer was the inventor and creator of a candy, still made today, called Gibralters. Part of the Spencer family from England, she was said to make her first batch in 1806 from a barrel of sugar donated to her.

Gibralters can still be bought at Ye Olde Pepper Company on Derby Street in Salem.
